The sourdough starter we use in our dough comes from natural fermentation based on high-quality Italian “00” wheat flour and is characterised by an intense and complex aroma.

About us

For many people, pizza is a quick and easy solution to hunger – but at Martinellis, it is much more than that. At Martinellis, it is all about recreating authentic Italian pizza culture – far removed from junk food and closer to an Italian dining experience with great flavours and high-quality ingredients.

The big difference starts with the pizza dough. Where most pizzerias use large amounts of yeast to save time, Martinellis takes a completely different approach. They use almost no yeast – only one gram per two kilos of flour. Instead, their pizzas are based on a sourdough starter that they make themselves and refresh every single day. The sourdough gives the pizza a unique flavour and lightness, allowing you to enjoy a pizza without feeling heavy afterwards. There are no shortcuts in the kitchen at Martinellis. Every ingredient is carefully selected, every dough is carefully risen, and every pizza is prepared with precision. From the first bite of a crispy pizza to the last crust.
